fun with curry

Tonight I made Curried Rice with Shrimp  from Real Simple  magazine – I’ve made this recipe to the “T” before and it is delicious, but tonight I decided to change things up a bit, since I had some different veggies on hand.
Instead of carrots, I used asparagus and edamame.  Also, I only had a small amount of onion to use, so I added some chopped scallions to the mix.   Hence, the very GREEN meal.  I used frozen shrimp, but the meal still came out incredibly good!!  Not only is this meal super healthy, it truly is really simple, too!
